Today, his vision is within reach, and Valeti is CEO of Upside Foods, the leading start-up in the ‘cultivated’ meat revolution. The meat may not grow on trees, but it does grow in a laboratory, where all kinds of things are possible: from the world's first meatball, which cost $18,000 per pound, to duck à l'orange. It sounds like a luxury gimmick – but it may be the revolution we need. The livestock industry already takes up nearly half of the world’s land area and produces more greenhouse gases than the entire transportation sector.
